Thai Peanut Chicken Whole Wheat Pizza

My girls has been asking me to make pizza for them since the beginning of the school holiday. And since I did my grocery yesterday and got all the necessary cheeses and topping ingredients, I have no more excuse not to do it, heehee. This time round I decided to make something different besides the usual Hawaiian pizza. Since my girls is not a big fan of onions or bell peppers, I opt for something more familiar for them, chicken and peanut! ;) So I went with Thai Peanut Chicken pizza, but minus the chili, heehee. And for a more healthy version, I made whole wheat pizza dough to go with the toppings. :) The combination is definitely a keeper!
As usual, I did a bit of research first before making a new recipe. I doubled my recipe to make both Thai Peanut Chicken and Hawaiian....in case my girls decided they do not want to eat the new flavor. Anyway, here is my version of the recipe:

Ingredients for Thai Peanut Chicken:
300g chicken breast, cut into small bite size & season with pinch of salt and pepper to taste
4 tbsp creamy peanut butter

1 tbsp honey
1 tbsp water

1 tbsp oyster sauce

1 tbsp sesame oil

1 tsp light soy sauce

1 tsp rice vinegar

1 tsp finely minced ginger

Method:
  • In a saute pan, heat up small amount of cooking oil, Add the chicken and stir fry it till it's just cooked. Dish up and set aside.
  • In a mixing bowl, add in all the rest of the marinating sauce and mix well.
  • Saving 2 tbsp worth of the sauce for later, add the rest into the cooked chicken and stir till all the chicken is well coated. Set aside for use later.
Ingredients for Whole Wheat Pizza Dough:
100g bread flour
50g whole wheat flour
50g cake four
10g caster sugar
2g instant active yeast
2g salt
25ml fresh whipping cream
110ml water

Method:
  • Mix all ingredients in a large mixing bowl to form a soft dough. Knead the dough for about 5minutes till not sticky and a nice dough ball.
  • Place dough in a greased bowl and cover with plastic wrap and allow to proof for at least 60 minutes.
  • Grease a baking pan for placing the pizza dough.
  • Punch out the air in the dough and roll into a round ball and let rest for 10 minutes before shaping the dough.
  • Roll the dough out into a flat round disc of about 35cm in diameter. Cover and let proof for 15 minutes.
  • Preheat the oven to 200°C.
  • Pre-bake the pizza without any topping for 10 minutes in the preheated oven.
  • Take out the pizza after 8 to 10 minutes and set aside to let cool for 5 minutes before placing the topping.
Assembly:
1 cup finely shredded mozzarella cheese
2 tbsp fresh Parmesan cheese
1/4 cup sliced thin green scallions

  • Preheat the oven to 210°C.
  • Spread the 2 tbsp peanut sauce saved earlier evenly over the surface of the pizza.
  • Add the cooked chicken and spread evenly. Follow by topping the cheeses and lastly sprinkle the 2/3 of the green scallions on top.
  • Place in oven to bake for 10 minutes till it's golden brown and the cheeses are bubbly.
  • Remove from oven and sprinkle the rest of the green onions on top of the pizza.
  • Let cool on rack for 5 minutes before slicing and serving. Bon appetito!
I made Hawaiian pizza, the family favorite as well. Also went really well with the whole wheat dough!. ;)
My better half even decided to drive all the way back for lunch after I informed him I'm making his favorite comfort food, haha!
The whole wheat dough is soft and yummy, and yet a much healthier choice then the usual dough...what was I thinking all these years? While eating this whole wheat pizza, I was already mentally telling myself I will always and only make whole wheat pizza dough. ;) Well.....unless I run out of wheat flour that is, heehee. ;)

The Thai Pizza is a very interesting pizza and for those peanut lover this pizza will explode your taste bud:-)
The whole wheat dough taste really good too. Both healthy and taste wah :-)

I just tried this recepi. Is ur flour wholemeal or whole wheat flour? My whole wheat flour doesnt hv the brown husk like yours? Appreciate ur reply. THXS

Hi Sheela,
I guess there are several grade or kinds of whole wheat flour out there in the market. There are those that contains higher ratio of wheat husks then other brands. I got mine from a local bakery supply store in KL. I like the proportion of wheat husks inside...do look for other brands if you find the one you are using is not what you like. But if you like the taste of your whole wheat pizza, no worries whether husks or no husks right?

Thanks for ur feedback. I find the said 'whole wheat' flour looks white. The dough after kneading too looks white. Think I'll go search for it another cake supply shop. I'm a healthnut & that's why I am making sure I'm using the right flour.

Yes, some flour brands are not as good as the others, so do look at it carefully before purchasing it. :) Good luck!
