Caramlized Banana Cream Cheese Tart


Recently I started playing this online game call Restaurant City in Facebook. I joined it mainly because a good friend told me it's a great game to play. So I joined it for my friend's sake, but now......... I'm "hooked"! Gee wheeze, now half the time when I am online...I will be worrying if my game is going well, or checking out how to renovate my kitchen, haha! I guess this is what you call "game addiction"! Hopefully I will get tired of it soon and make more good use of my time like baking something good in my own real life kitchen or just be with my girls then just playing online games. (not that there's anything wrong with it if you have time) :)

Yesterday I made this delicious tart call Caramelize Banana Cream Cheese tart. I got inspired to make this recipe from one of my previous post, Caramel Cream Cheese Banana cake.For the recipe and method of the rich tart pastry, please refer to my previous post. Note that my tart pan size is 7" or 18cm diameter, slightly smaller then normal. So feel free to increase the amount to suit your pan size. Also note that the tart pastry can be baked in advance and be ready before you do the filling.

Ingredients for Caramlized Banana & Cream Cheese Filling:
Caramel bananas
2 medium size ripe bananas, cut into chunks
60g caster sugar
2 tbsp water
3 tbsp heavy cream

Method:
  • In a saucepan, heat up the sugar & water till all melted. Continue to boil the sugar mixture till golden brown then remove from heat.
  • Add the heavy cream slowly, be careful it will splatter. Then add the banana chunks and stir well till coated.
  • Set aside to cool before use.
Cream Cheese Filling
55g cream cheese room temperature
25g caster sugar
15g cake flour
1 egg, lightly beaten
1/2 teaspoon vanilla extract
100ml fresh dairy whipping cream

Method & Assembly:
  • In a mixing bowl, beat the cream cheese, sugar till creamy. Then add the egg and continue to beat till well combined.
  • Add in the vanilla and beat again.
  • Add flour and stir well.
  • Lastly mix in the heavy cream and stir using a whisk till everything just combined.
  • Preheat the oven to 180°C.
  • Scatter the caramel and bananas on to the tart pastry and then pour the batter over it.
  • Bake the tart for 30 to 35 minutes till the surface is golden brown.
  • When done, remove from oven and let cool on rack for 15 minutes before removing from the tart pan. Cut and serve.
This tart can be serve warm or chilled, up to your preference. Personally I like it warm, that's when the banana and the cream cheese filling is nice and soft and literally melts in your mouth! Yum-O! Like what I said before, bananas and caramel is a perfect combination, and the taste intensify the following day. The pastry tart remains firm and crisp even the next day, excellent. ;)This is really an easy desert to make. So if you have some ripe bananas hanging in your kitchen, do consider making this delicious treat, I am sure it will win you some points! ;) Bon Appetit!
