Soft Potato Wheat Loaf and Awards

It has been so long, too long in my perspective since I last made fresh bread. I have been waiting, holding back my "urge" to bake a batch that I would make myself contented. :) Why hold back you ask? It wasn't the right time and the right place as yet. Now that I am finally in my new house with my new oven and reunited with my KitchenAid mixer, it's one BIG happy reunion, lol! And alas the wait was all worth it! A few weeks back when my mom called me over for dinner, I knew the opportunity has arrived. :) I had been wanting to make some nice bread for her and been delaying it for so long. So I quickly went with one of my favorite soft bread recipe which I baked before from 孟老师的100道面包 and modified it a little and came up with this Soft Potato Wheat loaf bread.
Okay, this looks like some ordinary looking loaf, but it is so so soft! I knew from my past experience that using potato in the dough will result in the bread being super soft. ;) But of course the handling and kneading of the dough will require extra work since it will be a soft sticky dough. :P


Since this recipe is similar to the one I have posted before, I will not be retyping it out again here in this post. The main difference is I had replace about 40 to 45g of wholemeal flour (Prima brand) from the bread flour in the dough recipe to make it a wee bit more healthy. :) If you are interested to try this out, please kindly refer to my previous post.
See what I mean? See how the slices gently lay on each other, lol! Furthermore, the loaf was well baked, means the crust was there but not thick, and internal was all nicely risen and puffed. :) *thick skin....I mean me, not the bread*
A shot of a slice of the bread....okay I admit I am really happy with this, hahaha! So good to have fresh baked bread in the house again....the toasty smell filling the whole house...an indescribable happiness for me. :D
Besides the loaf, I had some left over dough and I made 3 small pork jerky buns (肉干面包). I brought them over to my mum's and it was gone in minutes, even though everyone already stuffed themselves with my mum's delicious dinner, heehee. :D
A glimpse of my breakfast (half eaten already...sorry) the following morning. Happy? Contented? You bet I am, lol! You can have this too my friend, just get yourself in the kitchen and start baking. ;) No, no bread machine needed, just you and perhaps a good stand mixer (but your hands can do it too~!) will do. Even though it has been a super long wait of 6 months++, I was smiles again after this bake. Do try it out and let me know how it work out for you.

    Your bread look fluffy & soft. I not really confident in making bread, cause I find mine most of the time turn hard on the 2nd day. :(

  2. Thanks DG, you are so nice. ;) Hmmm.... the bread turns hard the following day can be due to several reasons. The most common one would be not kneading the dough enough to reach the "window" stage. Otherwise it's adding more flour then required because of tired of handling the sticky dough( I'm guilty of that last time). Eitherway, hope u will try bread baking again, I failed several times too but I didn't give up until I get the proper technique. Good luck yah!

  4. I am waiting for the day my KA will arrive from US. I don't dare to attempt soft sticky dough breads now as I don't knead that well, and my breads..sigh, are always under kneaded.

    Wait... October, then I'll try this out. My KA is arriving in Oct!!! It's so so so much cheaper to buy there.

  5. Bee Bee, the bread looks VERY soft! The sliced ones look floppy whilst leaning toward the next ... I know, bread makes with potatoes is usually soft! I'm so gonna make potato buns soon!

    Yeap, that's why bread is one of my fave bakes though it's also one of the most time-consuming. Love kneading dough with my own hands ... So therapeutic. (When I'm angry, I slam the dough against the counter. LOL!) What makes me fall in love with bread making is the fruit of your labor ... So rewarding, sensually rewarding! Your wait is worth it after all! ;)

  7. I was happy for you too Bee Bee..:) Your bread bakes are always nice and delicious!! I think I got to bake some bread or buns next week, it seems a decade for me for not baking breads...haha! Btw, may I know if I knead too long will there be a reason for a hard bread texture the next day too? Thanks ya..;)

  14. Pei-Lin, I am so like you, lol! Even though I let my mixer did most of the kneading, I still love to do the final slamming and punching of the dough at the end, lol! indeed very stress relief method, and yields good bread! Hahaha!

  15. Hi hi dear Reese, thanks for your kind support! But you too make delicious bread too! Hmmm.... Over kneading? I have not done that before but maybe will kill the yeast if your mixer overheats the dough. Must constantly check for the window stage towards the end, like every 3 to 4 mins. I am looking forward to seeing your yummy bread post!

  17. Sonia my friend, I am super excited when I talk about my new oven, lol! It's a German brand call De Dietrich. My model is DOC710X with 7 cooking functions. It's a high end oven so it promises excellent baking results but it's quite expensive. If price is not an issue and you bake so often like me, do consider it, it's value for money and you will LOVE it! Email me if you want more info.

  19. From the look of the pictures I can see this bread is very light and fluffy. Better still they are healthy too. I am sure they taste even better sandwich between ham and cheese :)
