Before I know it, the bread I made on Monday is already gone. Looks like homemade bread is pretty well liked by my family. ;) I guess I just have to roll up my sleeves and get to work on a new bread loaf! And since I am still on the healthy bread track, I have decided to come up with another wholesome bread recipe that is both tasty and good for the body. ;) Yup, this time I formulated this delicious Banana Oat Loaf with Raisins and Walnuts. Sounds good huh...it is good! I actually got this idea of adding banana and nut into the bread from a favorite cereal of me and husband's, Banana Nut Crunch from Post. ;)
You can imagine my glee when the loaf came out from the oven and tasting my first bite! It's really an indescribable joy! ;) The faint smell and taste of banana in the bread is great! And the extra crunch from the toasted walnuts goes really well too!
This bread is almost a complete meal on it's own. How you say? Well oats contains high dietary fiber, Iron and even lowers bad cholesterol. And don't get me started on walnuts! This delicious nut is an excellent source of omega-3 essential fatty acids, a special type of protective fat the body cannot manufacture. Banana, a "superfood" on it's own, is also an excellent source of potassium and other good nutrients. So having a couple slices of this bread is already a power breakfast you need for the day!
Unfortunately, I will not posting this recipe online at this point in time. But you can try out my Instant Oat loaf first and from there you can play with more ingredients. Once you get the hang of it, you can easily figure out the chemistry of bread making and soon you will be making yummy delicious bread of your favorite flavor and ingredients in it. ;)

Besides the Banana Oat loaf with raisins and walnut, I have made a mini loaf minus the raisins and nuts. Since my girls are not such a big fan of nuts in their bread, I decided to leave it plain as Banana oat loaf. This way the taste of banana is more evident and that's what my girls like. :)It's funny this morning when I gave 2 slices of this mini loaf to my girl, she exclaimed "Woah Mummy, that's little kids bread!" She happily down it with her favorite spread, haha!. ;D
