And hence it acts to neutralize acids and break down proteins, such as bananas in recipes like this. Baking soda also acts as a leavening agent to allow bake goods to rise where there's a chemical reaction releasing carbon dioxide creating small bubbles, resulting the bake goods being less dense. <br /><br />I guess you can Wiki or Google more on this topic if you're into the science of baking.
