The most common one would be not kneading the dough enough to reach the "window" stage. Otherwise it's adding more flour then required because of tired of handling the sticky dough( I'm guilty of that last time). Eitherway, hope u will try bread baking again, I failed several times too but I didn't give up until I get the proper technique.
